Yukon Gold Potatoes
Cut into 1½-inch chunks — consistent size means even cooking. Yukon Golds have the right starch content for crispy outsides and creamy centers.

Duck Fat
The secret weapon — higher smoke point than butter, richer flavor than olive oil. A neutral oil works too, but duck fat is what makes these special. Find it near the specialty meats or in jars by the oils.

1Heat
Preheat the Oven
Set to 450°F. The high heat is non-negotiable — it’s what creates the crispy crust while the parboiling has already handled the interior.
2Parboil
Parboil the Potatoes
Place potato chunks in a pot and cover with cold water. Salt the water generously and bring to a boil. Cook until a knife slides in easily but the potatoes aren’t falling apart — about 10 minutes. Starting in cold water ensures even cooking all the way through.
3Infuse
Infuse the Fat
While the potatoes boil, combine duck fat, rosemary, and garlic in a small pan over medium-low heat. Let the aromatics gently steep in the fat. If the garlic starts to brown, lower the heat — you want it soft and fragrant, not toasted.
4Dry
Dry Out the Potatoes
Drain the potatoes and return them to the pot over medium heat. Shake gently for 45 seconds to 1 minute until the surface moisture has cooked off. This is the step most people skip — don’t. Steam is the enemy of crispy.
5Toss
Toss in the Infused Fat
Pour the infused fat into a large bowl, add the potatoes, season with salt and pepper, and toss well. The potatoes should rough up slightly and leave a thick starchy paste on the inside of the bowl — that roughness is what becomes the crust in the oven.
6Roast
Roast Until Shatteringly Crisp
Spread in a single layer on a sheet tray — don’t crowd them. Roast at 450°F for 50–60 minutes, shaking the tray and turning potatoes every 10–15 minutes, until deeply golden and crisp on the outside and cooked through.

The Paste on the Bowl Is the Point

When you toss the potatoes and they leave a thick starchy paste behind — that’s not a mess, that’s the crust forming. The roughed-up, fat-coated surface is exactly what crisps up in the oven. Don’t rinse the bowl, don’t toss gently.

Time It With the Lamb Chops

Start the potatoes about 30 minutes before you light the charcoal chimney. They can hold in a warm oven (250°F) for 15–20 minutes while the chops rest without losing their crunch.

Where to Find Duck Fat

Look for it in small jars near specialty meats, the charcuterie section, or sometimes with the oils and vinegars. Whole Foods, specialty grocery stores, and butchers usually carry it. The jar keeps refrigerated for months.
