1Marinate
Marinate the Thighs
Toss the thighs with half the teriyaki sauce, the garlic, and the ginger; reserve the other half for glazing. Fifteen minutes on the counter is plenty; overnight in the fridge is even better if you're thinking ahead.
2Roast
Roast the Broccoli
Heat the oven to 425°F. Toss the florets with a little oil and salt, spread them out on a sheet pan, and roast 18–20 minutes until the edges are deeply charred. Toss with the sesame oil and soy the moment they come out.
3Sear
Sear the Chicken
Heat the oil in a large skillet over medium-high. Lay the thighs down smooth-side first and sear 5–6 minutes without moving them, then flip and cook 5 minutes more until they hit 175°F.
4Glaze
Reduce the Glaze
Pour in the reserved glaze and a splash of water. Let it bubble and turn sticky, 1–2 minutes, spooning it over the thighs until they're lacquered and glossy.
5Rest
Rest and Slice
Let the chicken rest 5 minutes off the heat, then slice each thigh into thick strips and spoon the pan glaze back over.
6Serve
Plate It Up
Chicken and broccoli side by side, sesame seeds and green onion over the top. Good over steamed rice if you want to stretch it.

Marinate the Night Before

Thighs shrug off a long soak — they won't turn mushy the way chicken breast does. Marinate them the night before and this becomes a 25-minute dinner.

Don't Crowd the Broccoli

Give the florets room on the pan. Crowded broccoli steams and stays pale; spaced-out broccoli chars and turns sweet. Use two pans if you need to.

This chicken splits one batch of Teriyaki Sauce with the salmon — make it Sunday (1½ cups total), then use ¾ cup here and ¾ cup there. It also plays nicely stirred into the beef stir-fry.
