A note on the berries

Blackberries aren't native to the Mediterranean — but they're everywhere in the U.S. and berries are a must for us. Consider this our American amendment to the week's theme.

Make the Honey Yogurt
1Mix
Sweeten the Yogurt
Stir honey and a small squeeze of lemon juice into the Greek yogurt. Taste and adjust — it should be lightly sweet with a bright edge.
2Chill
Refrigerate to Meld
Cover and refrigerate for at least 2 hours before serving, so the honey fully melds into the yogurt. (This step is optional but makes a real difference.)
Build the Parfaits
3Layer
Start the First Layer
Set out glasses, bowls, or ramekins. Spoon a layer of honey yogurt into the bottom of each.
4Layer
Berries & Granola
Add a handful of blackberries, then a generous scoop of granola.
5Repeat
Repeat & Drizzle
Repeat the layers, finishing with blackberries on top and a final drizzle of honey.
6Serve
Finish with Lemon Zest
Add a pinch of lemon zest over each parfait just before serving.
